Earlier this week we had a delicious Baked Ham with Cherry-Pineapple Glaze and we had leftover ham. Last week we had Zucchini Pancakes the zucchini we had was huge. Since it was fresh from the garden it kept well.
This was the perfect combination for a great Ham and Zucchini Frittata. The recipe for the Frittata calls for using gruyere cheese we had we used a Mexican blend instead since we already had it on hand.
Just in case that wasn’t enough vegetable we added a wonderful Tossed Salad and added some wonderful fresh and bright summer vegetables.
