Day 2 of our “Latin Theme Week” dinners.

Tonight our culinary adventure took us to Pueblo, Mexico. We took one of our new delicious shredded chicken dishes and used it to top tostadas.

The dish we had tonight was Chicken Tinga. This version was made in the slow cooker making it a perfect match for our Summer Electric Plan.

More importantly it was absolutely delicious!!
