Tonight we tried the first of our “Latin Theme Week” dinners. It was fun and interesting. We had a combination of Puerto Rican and Costa Rican food. They pared well.
From Costa Rica we had the
Gallo Pinto. That brought back memories for me. Many, many years ago I had the opportunity to visit there to help with some relief work after an earthquake. The friends their made lunch for us every day. Every day we had black beans and rice. Good times.
From Puerto Rico we had Bistec Encebollado – Steak and Onions. We did vary from the recipe a little bit. The recipe called for a filet. We used flank steak. We also found, as noted in the recipe, that we like the onions prepared a little differently than the way the recipe called for. We like ours a little more caramelized than steamed.
