Tonight we decided we wanted to try something new for the main course but wanted to keep it healthy too. So we decided to try this extremely versatile pork chop dish, Peppered Pork Chops with Peach-Vinegar Glaze. There are so many variations to this dish. The recipe offers the option of using peaches but we didn’t have any so we didn’t use that option. Instead of using a pre-packaged pepper mix we opted to use our own combination of black and pink peppercorns, with great success. We then combined it with Garlic Roasted Potatoes to add a savory element and a crisp Tossed Salad using fresh iceberg lettuce for just a little crunch.
All in All a great meal.
