Who can resist a Taco. Especially with one as easy as this. Some things should be kept simple. Mmmmmmm
Leftover pork roast, shredded
1/3 cup chopped onion
1/3 clove garlic, minced
1 teaspoon diced jalapeño pepper
4 flour tortillas, warmed
1 cup shredded lettuce
2/3 cup diced tomatoes
1/4 cup shredded Cheddar cheese
Salsa, as desired
In nonstick skillet, sweat onion and garlic over medium heat for 5 minutes, until soft and translucent.
Add cooked pork; toss lightly.
Stir in jalapeño pepper.
In each tortilla, roll up 1/4 cup shredded pork, a portion of the
lettuce, tomatoes, 1 tablespoon cheese and top with salsa, if desired.
