Corn Salsa

Corn Salad

This salsa provides a nice textural twist with the addition of pumpkin seeds. It pairs well with grilled chicken, pork or fish among other dishes

Serves 4

1 1/2 pounds Corn kernels, fresh or frozen, cooked
8 ounces Red pepper, small dice
2 ounces Cilantro, chopped
2 ounces Pumpkin seeds, hulled
1 teaspoon Cumin
1/2 teaspoon Black pepper, ground
2 fluid ounces Lime juice

Combine all ingredients and mix thoroughly. Serve at room temperature.
